As many on campus know, the restaurant formerly known as “Lime Mexican Grill” at Sbisa, is now operating as “Copperhead Jack’s. The kitchen and dining area of the Sbisa Lime Mexican Grill was renovated to allow for our sister company, Chartwells, to rebrand the space as Copperhead Jack’s, a Southwest style kitchen featuring built-to-order tacos, burritos, bowls, quesadillas and salads. The project, led by EDCS Project Manager II John Cargill, started in late May 2018 and wrapped up right in time for the 2018 fall semester. Renovations also included HVAC upgrades such as a new exhaust fan and make-up air unit, allowing for a more comfortable user experience in the space. John Cargill said, “This project was both fun and challenging. A collaboration between Chartwells, the FDA Office, PACT Design Studio, SSC and Dudley Construction allowed for a successful project.” If you’re in the area, stop in and try out the new food selection and revamped atmosphere.
